Super impressed. So I am a full-time hard-working chef. I’ve been dedicated to Shun, i’ve always loved them and they’ve always been great. I decided to go out on a limb and try a new knife. This knife is amazing! I was worried about the ergonomically handle because I hold my knife higher up on the handle but it fits perfectly. It’s perfectly in between A shun and a Meister which are way too heavy to me. It’s beautiful and retains its edge. I would recommend 100%.

Beautiful Craftsmanship and balance. I have had many higher end knives before but this knife with its balance and blade design is a star. something simple like cutting potatoes I have had knives that the product sticks to. this knife with its design passes with ease and doesn't form a vacuum of air that even potatoes do not stick to the cut. Wonderful design and quality.

Impressive. Very pleased and impressed from one not easily impressed. Well done. Also purchased their 1000/3000 stone. Both items speak quality in all aspects. Whether the blade would pass for a high end professional chef I cannot say. It is exactly what I was searching for, a quality tool with a bit novelty. Happened to have some people over when it arrived, all were impressed. Pics from others are accurate; this would make an exceptional gift.

Not so good. Not happy. Not worth the price. How do you say cheap in Japanese…

Not a "premium" knife in my opinion. I havent bought this knife. I feel like this knife is way overpriced for several reasons: 1. This is not damascus, it is layered steel. Layered steel is a forging technique, layers don't make steel true damascus. This is 440C stainless steel, nowhere close to damascus. The ability to make true Damascus has been lost to history. Raise your eyebrows at anyone who tells u theirs is damascus...... it isn't. This is fact, not my opinion. 2. 440C steel. 25 yrs ago this was considered top of the line, no longer. Middle of the road stainless steel generally reserved for budget knives. Sharp enough when sharpened but lacks the toughness of modern premium steels. I wouldn't pay this much for a 440 C knife. 3. Wood burl looks like a veneer rather than a solid piece of burl. It's layered on top of a synthetic material that could b plastic....they don't mention what it is in the description. A gyuto knife is the Japanese version of a european style of chef knife w its balance a little further forward for dexterity. It's not a traditional type of Japanese knife and I doubt that it has ever taken 6 months to make one. I'm sure this is a fine knife for daily use. It is attractive and should last. A better price would be less than half of what they are currently charging, even less than half of the sale price (this part is my opinion).
