Pros

Decent quality knife, some fit and finish flaws. This is a Henckels brand chef knife, manufactured in Spain. Overall a decent quality knife, with some fit and finish flaws. Of course, don't expect the quality of Henckels Made in Germany higher-tier knives that cost upwards of 15o dollars. The back edge (blunt edge, spine) has surprisingly sharp edges as some previous buyers have pointed out. I can see someone actually cutting their hand or fingers on the if they slide along the back edge while using this knife. I used a cheap honing stone with a little oil and ran it along the edges of the back of the knife, varying the angle until I softened the edges into more of a bevel. Recommend doing the same. The black plastic grip and the areas where it meets the metal of the blade also a little rough/imprecise fit and finish. It should all be very smooth at the transitions and it is not. Will try to smooth it out with some 800 or 1000 grit wet sandpaper. Again, good for the price but needs a little TLC.

best chef's knife. I bought this chef's knife after using it in a knife class at a culinary school. It was reasonably priced for a home chef's knife given the fact that it should last pretty much forever if you take care of it. Now, every time I use a knife at a friend's house, it makes me realize how terrible their knives are. I love the tapered section where the blade connects to the handle, it's really comfortable to hold. I ended up also buying a knife roll so that I can easily bring this with me when I travel.

Excellent quality workhorse knife. I love a good quality knife, and I've tried several popular brands, but had never tried a henckels. This chef knife is solid, not too heavy, and feels great and balanced in my hand. It arrived very sharp, showing me to easily chop some veggies and meat for some chili I had planned. I'm looking forward to living with this a while to see how great it is to get to enjoy such a quality knife over time. I'll update after I've enjoyed it for a while.

Heard all the hype. For years I’ve heard about the hype behind Henckels knives and I finally took the leap and purchased a 8” chef’s knife. Right out the packaging was impressed. The weight and balance was perfect as I sliced through a slab of pork shoulder. I hand washed it as recommended and then used it to dice tomatoes, carrots, celery and onions. As expected it worked like a charm with no need to use a back and forth sawing method to get through. I’ve had no problems with it so far. No rusting or dulling. I will update if any flaws arise.

New knife, first time purchasing any product made by zwilling aka J.A. Henckels. First time purchase/user. -October, 2022 Will have an update after using the knife. The knife I received is from Spain or made there! Cannot activate a lifetime warranty in the USA, however it comes with a limited warranty automatically. When I scan the qr code on the package to activate the warranty (as instructed) it redirects be to a site where I can register the product.

Great knife but arrived not quite sharp enough to work. *Update 4-23-2020* I had this knife sharpened by a professional sharpener in my area and the knife still did not impress me with it's sharpness. On top of that I've noticed that the spine of the blade is very uncomfortable to work with as it is sharp and cuts into your skin. I think this knife is OK. But it is NOT a 50 dollar knife! I don't think a 50 dollar knife should have trouble getting a sharp edge and have a sharp spine. For the record mine is the one made in Spain not China. This knife was clearly rushed out of production and it is dissapointing. If I had a grinder I'd probably be able to polish it up a bit but I don't. I will keep my rating at 3 stars. I'm neither impressed or think the knife is in a condition where it is must return. The knife arrived on time and just in time to cut an onion for Steak Day. It was packaged in a white carboard box with bubble wrap that was then placed inside a larger box. I'm not sure if they are supposed to come this way. Maybe this is their bulk packaging? The knife looked new however so that wasn't a concern. Stamped on the knife this knife is a J.A.Henckels International knife made in Spain. So for the person who said they got one that was made in China and not Spain, they were clearly sent the wrong knife which is from a different collection. While the knife did the job I can attest that it arrived under sharpened. For 50 Dollars I expected more to be honest. Cutting the onion took a bit more force than it should of and the knife failed the paper cutting test. No big deal I can resharpen it. I don't feel that a product you pay 50 dollars for should come this way though. Will five extra passes on the grinder or whetstone kill their business? Or maybe arriving sharpened is a privileged left for $100 plus knifes due to corporate greed. Manufacturing Quality: Where the bolster meets the blade it clearly was finished incorrectly. The bolster is a bit crooked leading up to the blade. It's only noticeably if you are looking for it. How it handles. As for the weight and handling of the blade it is great! Well balanced. The balanced point is slightly offset towards the handle side by about 3/4 an inch. But I prefer that. I think I will keep the knife because it is knife and I need one now not later but if Henckels is reading these things you need to check your quality control over in Spain. They are clearly rushing the blades by skimping on the sharpening and grinding of the bolster. All in all I like the knife. I will not be buying from Amazon anymore to purchase expensive kitchen tools. The packaging was suspect. Is the J.A. Henckels International Spain worth $50 here on Amazon? No at least not the one I got. Not sharpened, no retail packaging and the bolster was not ground perfectly. I will update this review with my findings on knife retention and durability after I have had more time with it. For now I think you all would be better served by going to a reputable dealer on the other major kitchen tools websites and picking up something there for the same price where they probably have more current stock in the retail package. It might provide for a better product. Or go somewhere in person and try the knife out in person and see what you think.

Decent quality but not sharp. Decent quality but this knife was not very sharp.

Much lower quality than expected from Henckels. Title tells you all that you need to know. I bought a very similar knife from them years ago and it was my workhorse knife for 5+ years. Recently, I decided that a new workhorse knife was needed and purchased this. It did not come sharp, nor did it have anywhere near an even grind on the bevel of the blade. The blade was also incredibly thin, something similar to a filet knife. The polymer handle is also not correctly lined up with the tang of the knife, with about a milimeter and a half or so of difference between the end of the tang and the end of the handle. Overall, their quality seems to have drastically dropped over the years and I would not recommend this knife.

Very Surprised, Not like the past. I was VERY surprised by how much the quality has changed. I have owned a Henkels 8" Chef knife Since the early 90's. I ABSOLUTELY love their knives, so much so that this is my 3rd one. The first two broke after many many great years of service. Each time. they were replaced free of charge by Henkels as part of their warranty program. I recently sent a chef knife back to Henkel under warranty after the black plastic handle broke at a rivet. Henkel was kind enough to replace the knife but ended up sending me a Slicer not a chef. I needed a slicer so kept it and just purchased a new 8" Chef knife which this review is written for. The knife feels off in my hand. It feels to heavy, not well balanced. It feels this way when gripping by the handle and when pinching the blade between my thumb and pointer finger. The edges of the handle are sharp and dig into my hand. I am a firemen by trade and do construction on the side. This is said to show I do not have sensitive hands. As I pinch the knife blade between my thumb and pointer finger to slice london broil nice and thin the back of the knife (the edge opposite the knife edge) will actually cut the knuckles of the hand holding the meat and guiding the knife. I've use many knifes both high end and not so much, never have they cut my knuckles. The knife also wasn't as sharp as one would expect a brand knew Henkles to be. I purchased a 5-1/2" prep knife and that thing would slice the skin off a tomatoe. This chef knife was sharp but just barely it wasn't as sharp as those previous chef knives I received.

Good knife, slow and poor customer service...lifetime guarantee if you are willing to wait months,. An update 12/27/09....The week before Christmas I received a replacement knife. After Henkle examining the knife, it was determined to be a manufacturing issue. Excess pressure on rivet caused a fisure crack allowing moisture to slowly migrate into handle ultimatly causing failure. I am glad to have the knife, however it did cost me $40 bucks to buy a replacement to use while I waited for the determination. Original post.......I purchased this knife in March of 2005. I have taken exceptional care of this knife. It's always been hand washed, professionally shapened and cared for. It's a $50 knife afterall...not cheap. The handle literally fell off of each side of the knife while slicing vegetables. I wasn't injured but could have been. The interior steel had rusted and corroded screws that held the handle together. I thought it was riveted. It wasn't properly done.. I contacted J.A. Henckels, via email, sending a copy of Amazon's invoice, detailed photos and copy of product description. First I got an Out-of-Office response directing me to email a different address. Both times, I requested a replacement, or a pre paid label so that I might return the knife. They responded with a computer generated pre-formed email: "Thank you for your recent e-mail inquiry concerning Zwilling J.A. Henckels products. You will be pleased to know that all of our products are fully guaranteed against manufacturer's defects in materials and / or craftsmanship. The warranty does not cover wear from normal use, bends, nicks, dents, chips, or any damage resulting from use other than the intended purpose of the item. Wood products, including wood handled knives, are not covered by the Zwilling JA Henckels warranty, as wood is a natural element and thus cannot be guaranteed. We will evaluate your product and should it be under warranty, we will gladly replace the product at no charge. We cannot guarantee that the same line or size will be available therefore it will be replaced under our discretion, with a comparable item or an upgrade." ....verbatum of the warranty statement on their website. It would be nice to actually work with a real person about this issue instead of a computer generated response. I don't think I was asking too much for contact from a person and a pre-paid label sent to me, as I have to package, go to post office and wait in line, mail, and then wait another 4-6 weeks for them to decide my fate with this knife. If you want this knife, buy local so that you can work with an actual person to resolve your problems otherwise, be prepared to wait should it have a manufacturer defect.

Overpriced, cheaply made junk. Company is just capitalizing on their reputation. First off, this knife is made in Spain, not Germany. The logo is different from the original. The edge is porly ground and knicked inseveral places. The scales dont fit properly causing the tang to protrude, and the spine of the blade sharp enough to cut you. Not worth buying at full price. Hell, not really worth more than about $20 in my opinion.
